Bolta credits his approach to winemaking to the broad experience
he has acquired while working at Caymus Vineyards. Joining Caymus
in early 1983, Jon worked successively on the bottling line,
in the cellar and in the vineyards "planting vines, driving
the tractor, anything and everything" he recalls. While working
under the direct supervision of winery co-founder Chuck Wagner,
Jon's understanding of Caymus' philosophy was recognized and
he was promoted to assistant winemaker. Over several years,
Chuck and Jon experimented together with a view to develop wines
with more richly layered flavors. In 1988, Jon was named as
winemaker for the white wine program. In this role he developed
the style of Caymus' Napa Valley Sauvignon Blanc and Conundrum.
Jon continues to develop these wines, which he considers to
be, "outside the typical parameters for white wines."
